Ma invece di parlarti di medicina e nutrizione preferisco parlare dell’olfatto, un senso che entrambi coltiviamo e per cui tutto accade nel cervello. L’olfatto è il più intimo fra i sensi. Il suo territorio rimane confinato al cervello del soggetto che odora, anche se una «scena olfattiva» può essere condivisa. Tutto risiede precisamente nella capacità del cervello, niente di esterno attesterà ciò che l’altro sente con il proprio naso. Non abbiamo a disposizione nessun criterio obiettivo condivisibile come quelli che invece si danno per la vista, l’udito o il tatto.
Ho già parlato della leptina secreta dalle cellule adipose, ma intervengono anche i fattori ormonali del metabolismo, come viene chiamato l’insieme delle trasformazioni chimiche e degli scambi che rendono possibile il funzionamento delle cellule di un organismo. Vi prendono parte il fegato, il pancreas, l’intestino e le ghiandole surrenali.
