This will produce soft-boiled eggs, if you want hard-boiled, simply double the time. Remove and place eggs in cold water, to prevent them cooking further. When cooled, roll on a flat surface applying slight pressure so the shell cracks, and peel.
Bake blind in the preheated oven for 15 minutes. Remove the beans and parchment paper and return the pastry cases to the oven for 5–10 minutes, until very lightly coloured. Prepare the leek by cutting off the root and discarding any darker outer leaves. Slice the leek in half lengthways and rinse under a cold tap. Chop the rashers with kitchen scissors. Grate the cheese and add to the egg mixture, season with salt and black pepper and add the leek and bacon. Tip: Prepare and bake your pastry cases in the morning and fill them when you need them.
